Herb Roasted Whole Chicken


The perfect budget-friendly meal prep staple. Be sure to save (or freeze) the bones for stock!


Herb Roasted Whole Chicken

Serves 4-6


  • 1 organic air chilled whole chicken

  • 3 tablespoons olive oil

  • 3 cloves garlic

  • Half a lemon

  • 1 bunch fresh rosemary, chopped

  • 1/2 teaspoon dried thyme

  • Salt and pepper, to taste


  1. Preheat the oven 475. Remove giblets from the chicken, rinse, pat dry and place in a greased cast iron skillet (can layer veggies underneath).

  2. Place garlic cloves and lemon inside the chicken cavity. Coat the chicken generously with olive oil, then season with fresh rosemary, thyme, salt and pepper. Roast for about one hour or until internal temperature reaches 165.
