Cashew Butter Chocolate Chip Cookies


These cookies couldn’t be simpler to make, have only 6 ingredients and you’d never know they’re flourless!

Cashew Butter Chocolate Chip Cookies

Serves 12


  • 1 cup cashew butter

  • 1 egg

  • 1 teaspoon vanilla

  • 3/4 cup coconut sugar

  • 1 teaspoon baking soda

  • 3/4 cup chocolate chips


  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

  2. In a medium size bowl, mix the cashew butter, egg, and vanilla until smooth. Stir in the coconut sugar and baking soda, then gently fold in the chocolate chips.

  3. Use a cookie scoop to form the cookies and bake for 10 minutes. Remove from the oven and let cool for 5 minutes, then transfer to a cooling rack.
