One-Pan Tomato Basil Cod

This simple cod dish is as flavorful as it is colorful! Serve with rice or pasta for the perfect easy meal.

One-Pan Tomato Basil Cod

Serves 3


  • 2 teaspoons olive oil, divided

  • 3 cloves garlic, minced

  • 1 pint cherry tomatoes, sliced in half

  • ¼ cup dry white wine

  • ½ cup chopped basil

  • 2 tablespoons lemon juice

  • 2 teaspoons lemon zest

  • Salt and pepper to taste

  • 3 Sizzlefish cod fillets, defrosted


  1. Heat one teaspoon of olive oil in a skillet over medium heat. Add the garlic and saute until fragrant.

  2. Add the cherry tomatoes and cook until soft, about 5 minutes.

  3. Add the white wine, basil, lemon juice and lemon zest. Let the sauce come to a simmer and cook for two more minutes.

  4. Transfer the sauce to a bowl and add remaining oil to the pan. Season the cod with salt and pepper and cook for about 5 minutes.

  5. Flip the cod, pour the sauce over top and cook another 3-5 minutes until done.
