Tuna Stuffed Avocados
When it comes to lunch, I all too often skip it altogether and end up mindlessly snacking until dinner. Lately I’ve started keeping canned tuna around as a quick and affordable protein option and almost forgot how much I love it. These tuna stuffed avocados take just a few minutes to prepare and make the perfect filling lunch.
TUNA STUFFED AVOCADOS
2 ripe avocados
1 can albacore tuna, drained
2 tablespoons avocado oil mayonnaise
2 tablespoons chopped red onion
¼ cup cherry tomatoes, sliced in half
Salt and pepper, to taste
Fresh cilantro, chopped
Slice the avocados in half and remove the pits.
In a small bowl, mix together the tuna, mayo, red onion, cherry tomatoes, salt, pepper and cilantro. Stuff each avocado half with the tuna mixture.
Top with a squeeze of lime and serve with crackers.
