Caprese Grilled Chicken
If you’re bored of plain grilled chicken breasts, this caprese grilled chicken is the answer. Marinated in a super flavorful balsamic vinaigrette and topped with fresh mozzarella, tomato and basil, these chicken breasts are the perfect addition to your weekly meal prep.
CAPRESE GRILLED CHICKEN
1⁄4 cup olive oil
2 tablespoon balsamic vinegar
2 cloves garlic, minced
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
1 pound boneless skinless chicken breasts
8 ounces mozzarella cheese, sliced
1 large tomato, sliced
Chopped fresh basil
Stir together the ingredients for the marinade in a small bowl.
Butterfly the chicken breasts and place them in a large ziplock back with the dressing. Toss well and marinate in the refrigerator for at least 2 hours.
Grill the chicken on high heat for about 5 minutes per side or until cooked through.
Layer mozzarella and tomato slices on top and cook on low for 2-3 minutes more until the cheese is melted.
Top with fresh basil and drizzle with balsamic if desired.
