Paleo Key Lime Pie Bars

A refreshing dessert to keep you cool all summer long, these paleo key lime bars will be a hit at your next BBQ.

Paleo Key Lime Pie Bars

Serves 9



  • ¾ cup almond flour

  • ¼ cup coconut oil, melted

  • 3 tablespoons honey

  • ½ teaspoon vanilla

  • ¼ teaspoon salt


  • (2) 15-ounce cans coconut milk, solid cream only and refrigerated overnight

  • Zest of two limes

  • Juice of two limes

  • ¼ cup honey

  • Lime slices and zest for topping


  1. Preheat the oven to 350 degrees and line an 8x8 inch baking dish with parchment paper. In a small mixing bowl, stir together the almond flour, coconut oil, honey, vanilla and salt. Press the mixture into the baking dish in an even layer and bake for 10 minutes.

  2. Allow the crust to cool while making the filling. Scoop the solid cream portion of the two cans of coconut milk into the bowl of a stand mixer (reserve the liquid portion for another use). Beat on high speed for about 5 minutes until fluffy.

  3. Add the lime juice, lime zest and honey and beat for another 2 minutes.
