Asparagus & Mozzarella Stuffed Chicken

Asparagus & Mozzarella Stuffed Chicken

Serves 4



  1. Preheat the oven to 350 degrees.

  2. Butterfly the chicken breasts vertically, almost all the way through, leaving one end in tact.

  3. Stuff each breast with mozzarella and 4-5 pieces of asparagus. Secure the end with a toothpick.

  4. Sear the chicken in a lightly oiled skillet over medium high heat for 2-3 minutes per side. Transfer to the oven and bake for about 20 minutes or until cooked through.
