I eat walnuts just about every day—I love toasting them in a pan and adding them to my salads! I find that the chocolate chips add the perfect amount of sweetness to this recipe, but feel free to add a bit of maple syrup or honey if you like it sweeter.

Chocolate Chip Walnut Banana Bread

Serves 6

Ingredients:

  • 2 ripe bananas

  • 2 eggs

  • 3 tablespoons coconut oil, melted and cooled

  • 1 teaspoon vanilla extract

  • 2 cups almond flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/3 cup chopped Fisher walnuts

  • 1/3 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees and line a 9x5 loaf pan with parchment paper.

  2. Using a fork, mash the bananas in a large bowl. Add the eggs, coconut oil, and vanilla, and stir until smooth.

  3. Add the almond flour, baking powder, and salt, and stir. Fold in the chocolate chips and Fisher walnuts.

  4. Pour the batter into the loaf pan, and top with more Fisher walnuts and chocolate chips if desired. Bake for 30-45 minutes or until a toothpick inserted in the center of the bread comes out clean.
