CHICKEN BACON RANCH SLIDERS
1 lb organic boneless skinless chicken breasts
Salt and pepper, to taste
1 lb bacon
1 ½ cups shredded cheddar cheese
1 dozen mini buns
1 tablespoon melted butter
1 tablespoon chives, chopped
Preheat the oven to 375 degrees.
Place the chicken breasts in a 9x13” baking dish, season with salt and pepper, and add ¼ cup of water to the dish. Bake for 25 minutes.
After 15 minutes, lay the bacon out on a cookie sheet and add it to the oven. Bake for 10 minutes.
Remove the chicken and bacon from the oven. Shred the chicken with two forks, transfer to a bowl and toss with the ranch dressing.
Place the bottoms of the mini buns in the baking sheet and top with shredded chicken.
Slice the beacon in half and layer on top of the chicken. Top with shredded cheese and add the top buns.
Stir together the melted butter and chives and brush the mixture on top of the buns. Bake for 5 minutes or until cheese is melted.
